The girls like to eat these in the morning before school. It’s rare that I actually get to eat one before they all disappear. Simple, classic sandwiches. If you bake the eggs, it saves you some work.
all you need:
Heat oven to 325°F. In a separate pan over medium heat, brown the turkey sausage.
Blend the eggs and cottage cheese, if using, with salt and pepper and pour into a greased baking dish or sheet pan small enough to keep the eggs ½-1 inch thick. Add turkey sausage to pan, scattering evenly across the eggs.
Bake for 16-22 minutes, or until just set. Big time window here, just keep an eye on them until they firm up.
Let cool slightly and cut into 6 portions.
Split and lightly toast the English muffins.
Layer each with egg and sausage brick (?) and cheese.
Let everything cool completely before wrapping and refrigerating or freezing.

I like to keep the parchment paper on them and microwave, so it steams the sandwiches. From the fridge, microwave for about 60 seconds. From frozen, microwave for a minute and a half. If you don’t have a microwave, you can also bake or airfry them as well.
