Dice potatoes into 1-inch chunks.
Toss potatoes with oil.
Mix coating ingredients together, then coat the potatoes evenly.
Spread potatoes on two greased baking sheets, avoiding crowding.
Bake at 425°F for 40 minutes, rotating pans halfway through.
