Squash And Bean Stew
  1. Peel and chunk up a bunch of Butternut squash

  2. Slice up a bunch of shallots

  3. Cook the shallots in olive oil until soft

  4. Add the Enduya (spicy, spreadable Italian sausage) and toast it up

  5. Add tomato paste and chicken stock

  6. Toss in the squash and cooked beans

  7. Add a bay leaf and simmer covered for a bit, then finish cooking uncovered

  8. Wilt in any greens if desired

  9. Toss together herbs, lemon, and salt for a topping

  10. Serve with a fried, soft boiled, or other style of egg
