Grilled Watermelon, Halloumi, And Olive Salad
  1. Start by preparing your grill for medium heat.

  2. In a small bowl, whisk together 2 tablespoons of olive oil, lemon juice, salt, and pepper.

  3. Cut the watermelon into thick slices and sprinkle sugar over them.

  4. Brush the watermelon slices with the olive oil mixture.

  5. Grill the watermelon for about 3-4 minutes on each side until grill marks appear.

  6. While the watermelon is grilling, brush the halloumi slices with the remaining olive oil.

  7. Grill the halloumi for about 2-3 minutes on each side until golden brown.

  8. Once everything is grilled, arrange the watermelon and halloumi on a serving platter.

  9. Top with kalamata olives, fresh basil, and mint before serving.
