Add a pinch of salt to the grated cucumber and let rest for 30 mins in a bowl
Strain the cucumber through a clean kitchen towel, tie it and squeeze to remove liquid from the cucumber. This is important, otherwise you get a more watery soupy version, more akin to the Turkish Cacık.
Mix garlic and cucumber with the yoghurt in a bowl
Level the mixture and cover it with olive oil. Let rest for at least 4, ideally 12 hours.
