"just Crack An Egg" Breakfast Prep!
  1. Peel and dice the potatoes

  2. Dice the onion

  3. Cut the sausage into small pieces

  4. Preheat oil and butter in a large skillet

  5. Fry the sausage until browned

  6. Remove the sausage and add the diced potatoes and onions along with a splash of water

  7. Cover and steam for 8-10 minutes

  8. Toss the potatoes and onions and season with salt and pepper

  9. Add the cooked sausage back in

  10. Divide the mixture into 4 containers and refrigerate

  11. In the morning, crack 2 eggs into the container, scramble and microwave for 30 second bursts until fully cooked (90 seconds total)

  12. Add shredded cheese after the eggs are cooked

  13. Finish with a drizzle of salsa or hot sauce
