Peel and dice the potatoes
Dice the onion
Cut the sausage into small pieces
Preheat oil and butter in a large skillet
Fry the sausage until browned
Remove the sausage and add the diced potatoes and onions along with a splash of water
Cover and steam for 8-10 minutes
Toss the potatoes and onions and season with salt and pepper
Add the cooked sausage back in
Divide the mixture into 4 containers and refrigerate
In the morning, crack 2 eggs into the container, scramble and microwave for 30 second bursts until fully cooked (90 seconds total)
Add shredded cheese after the eggs are cooked
Finish with a drizzle of salsa or hot sauce
