Kale Salad Dressing (small Batch)
  1. Whisk the Base Ingredients. In a small bowl or jar, whisk together the mayonnaise, Dijon mustard, honey, and apple cider vinegar until well blended. (It will be liquid-y.)

  2. Stir in Seasonings. Stir in garlic powder and oregano.

  3. Add Olive Oil and Season to Taste. Slowly drizzle in the olive oil while whisking to emulsify the dressing. Taste and adjust the seasoning if needed. Want more brightness? Add a little more vinegar. Need more richness? Add another drizzle of olive oil.

  4. Massage it into the Kale. Pour the dressing over your chopped kale and massage it in with clean hands (or tongs) for about 30 seconds to soften the leaves.
