Preheat your oven to 325F.
To a lidded baking dish, add the chuck roast and all other ingredients. Grate the garlic as far as you can and then nestle in those nubs into the beef. Cover and roast for at least 3 hours. (Tip: if you have a 3 lb piece of meat, it will take 3 hours. 4 lb piece will take 4 hours. Go by the larger piece.)
Remove from the oven. Use 2 forks to break apart the meat. If it is not easy to shred, cover the dish and add back to the oven in 40 minute increments until the beef is easily shredded. This step will take a little while as you want the pieces small and bite sized. Give the shredded chuck a good stir into the juices.
Increase the temperature to 450F and place the baking dish back in the oven uncovered so the beef can caramelize. I roast for another 30-45 minutes, but at least 20 will do. Serve and enjoy.
To make this dish ahead: You can marinade the beef in advance. After step 3, allow the beef to cool and place on the fridge for up to 2 days. Pick up at step 4 and enjoy.
