Blend together all broth ingredients except ice until combined
Taste and adjust seasoning as needed
Blend in ice cubes and chill broth in freezer
Boil buckwheat noodles and place in ice bath
Boil egg in the same water for 7 minutes and place in ice bath
Shred, peel, and chop all garnishes and set aside
Assemble noodles in a shallow bowl
Pour about ⅓ of the broth around the noodles
Garnish with cucumber, cabbage, egg, radishes, and herbs
Add chili oil and sesame seeds before serving
