  1. Juice limes and set juice aside. Place pork in a large bowl and rinse in cold water. Drain excess water and add lime juice, salt, black pepper, minced garlic and Epis and mix thoroughly.

  2. Cover with plastic wrap and place in fridge for 1 hour.

  3. Cook pork in a large pot on medium heat for 30-40 minutes and stir occasionally.

  4. Preheat the air fryer to 400 degrees for 5 minutes.

  5. Place the pork in the air fryer (do not over crowd). Cook for 8-12 minutes depending on your air fryer.

  6. Insert meat thermometer into meat to ensure that the temperature is 165ºF before taking it out of the fryer.

  7. Take 2 cups of the excess juices made from cooking the pork and put in a medium sized sauce pot.

  8. Add 1 tsp of tomato paste and whisk to evenly distribute the tomato paste. Add salt and pepper to taste.
