Pork Tenderloin With Tomato Corn Salsa
  1. Char the corn kernels in a dry pan to get a nice char on them.

  3. Slice the cherry tomatoes in half and season them before adding to the pan.

  4. Season the pork tenderloin with salt, pepper, and garlic powder.

  5. Sear the pork tenderloin on all sides in a hot pan, basting with butter.

  6. Make the salsa by combining the charred corn, onions, and tomatoes, and adding spinach, basil, and a touch of vinegar.

  7. Crisp up some prosciutto in the pan and add it to the top of the pork tenderloin.

  8. Serve the pork tenderloin with the tomato corn salsa spooned over the top.
