Chili Ham Jam
  1. Blend or smash up the garlic, chilis, lemongrass, kaffir lime leaves, ginger, and salt flakes to a paste

  2. Fry the diced ham in sesame oil to render the fat and crisp up slightly

  3. Add the paste and fry until fragrant

  4. Add the diced red onion and cook down for a couple of minutes

  5. Pour in honey, sugar, fish sauce, and vinegar

  6. Reduce until the mixture becomes thick and jammy

  7. Taste and adjust seasoning with more acid or sugar if needed

  8. Transfer to a jar and store
