Toss chicken with paprika, garlic powder, onion powder, salt, and pepper.
Heat olive oil in a skillet. Cook chicken 4–5 minutes per side until browned. Remove.
In the same pan add broth and cream. Stir in cream cheese and/or parmesan if using. Simmer 3–4 minutes.
Add chicken back to the sauce and simmer 3–5 minutes until thick and creamy.
Sprinkle parsley and serve with crispy fries.
