Tomato Chutney (ava’s Slowed-down Gordon Ramsay)
  1. Peel tomatoes: Blanch, shock, peel, and chop.

  2. Rest tomatoes + onions with salt 12–24 hours. Drain.

  3. Cook tomatoes, onions, garlic, vinegar for 20 mins.

  4. Toast spices dry, crush lightly.

  5. Add spices, paprika, pepper. Simmer 5 mins.

  6. Stir in sugar. Simmer uncovered ~30–40 minutes until thick.

  7. Add cornflour slurry if needed. Simmer 5 more minutes.

  8. Jar hot, seal, cool. Rest a few days before diving in
