In a small mixing bowl, combine dried sage, brown sugar, dried thyme, dried rosemary, onion powder, garlic powder, salt, black pepper, and red pepper flakes (if using). Mix well.
Transfer the mixture to an airtight container and store in a cool, dry place.
To make breakfast sausage, mix 1 tablespoon of seasoning with 1 pound of ground pork in a bowl until evenly distributed.
Heat a skillet over medium-high heat, add seasoned ground pork, and cook until browned and fully cooked, about 10-12 minutes.
Serve with eggs, toast, and your favorite breakfast sides.
Note: This recipe yields approximately 5 tablespoons of Breakfast Sausage Seasoning. Enough to season 5 pounds of meat.
