Preheat your air fryer to 350°F (175°C) or oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
In a bowl, combine cottage cheese, mozzarella, eggs, garlic powder, paprika, and salt. Mix until smooth and well combined.
Shape the mixture into small bite-sized pieces (about 1–1.5 inches). Roll each bite in almond flour or breadcrumbs. Sprinkle Parmesan on top if using.
Place the bites in the air fryer basket or on the baking sheet. Air fry for 10–12 minutes or bake in the oven for 12–15 minutes until golden and crispy.
Let cool slightly before serving. Enjoy warm for a gooey, protein-packed snack.
