Tornado Sweet Potatoes

Sweet Potato Seasoning (2 Cups)

  1. In a small bowl, combine the fennel seeds, thyme, salt and paprika, Stir until well-combined. Store in an airtight container in a cool, dry place for several months.

  2. In a large Dutch oven or heavy-bottomed pot, heat the peanut oil over medium-high heat until 350F.

  3. Spiral each potato. Dust the sweet potatoes with cornstarch, shaking off excess. Carefully separate the layers of the sweet potato on the skewer, leaving an inch at the top and bottom to act as a handle.

  4. Place the sweet potatoes in the hot oil, one or two at a time. Fry 3-4 minutes per side until golden brown. Use metal tongs to grab the end of the skewers and transfer to paper-lined plate. Immediately sprinkle with seasoning. Repeat with the remaining sweet potatoes and serve hot.
