Thai Inspired Shrimp Salad
  1. First, prepare the dressing. In a blender, add all of the dressing ingredients. Blend until creamy. Taste and adjust seasonings if needed and set aside.

  2. Next, prepare the shrimp. Add oil to a skillet over medium heat. Add jalapenos and garlic. Sauté for 2-3 minutes, then add the shrimp. Keep sautéing until the shrimp is cooked through (not translucent). Set aside.

  3. Finally, build the salad. In a large bowl, add shredded cabbage, carrots, green onions, red onion, mint and chopped peanuts. Top with cooked shrimp. Pour dressing on top. Toss and enjoy!
