Preheat the oven to 350 degrees.
In a large mixing bowl, place the butter and sugars and mix until nice and fluffy.
Add the egg and the extracts.
In a separate bowl, place the flour, cinnamon, cream of tartar, baking soda, salt and the nutmeg, then whisk them together, slowly add them to the butter mixture and then stir in the peaches.
Drop the dough onto a baking sheet.
Bake until the center of the cookies are done, which is around 12 minutes.
Allow the cookies to cool.
