French Onion Beef Stew With Cheesy Bread Topping
  1. Caramelize the onions: In a large pot, heat butter and olive oil over medium heat. Add the sliced onions and cook slowly for 25–30 minutes, stirring often, until they become soft, golden, and sweet.

  2. Brown the beef: In a separate pan, season the beef with salt and pepper. Sear it on all sides until nicely browned, then add it to the pot with onions.

  3. Build the stew: Stir in flour and tomato paste; cook for 2 minutes. Pour in red wine to deglaze, scraping up any browned bits. Add beef broth, thyme, and bay leaf. Bring to a simmer. Cover and let it cook gently for 1½–2 hours, until beef is tender and broth thickens.

  4. Prepare the cheesy bread topping: Toast the baguette slices lightly. Top each with grated cheese and broil (or bake) until melted and bubbly.

  5. Serve: Ladle hot stew into bowls. Float the cheesy bread on top (like French onion soup). Sprinkle a little extra thyme or cheese if you'd like.
