Blitz together the ingredients for the dressing. Adjust to taste, more maple syrup for sweetness, more miso for umami & lime for more bite
Preheat air-fryer to 200°C. Crumble the tofu and pat dry
Toss tofu in a bowl with soy sauce, sriracha, cornflour & maple syrup
Toss broccoli with sesame oil & half the sesame seeds
Place tofu and broccoli in the air-fryer and cook for 4 minutes
Give everything a stir & cook for a further 4 minutes. Remove the broccoli & stir the tofu before returning to air-fryer
Cook for a further 7-12 minutes, until golden brown and crispy
Toss the cooked broccoli with the noodles, edamame and about ½ of the dressing
Divide the noodles, tofu & veg between containers. Store dressing separately & drizzle when ready to eat
Finish with sesame seeds when ready to serve
