Preheat your oven to 350°F and line a loaf pan with parchment paper.
In a bowl, whisk together the flour, baking powder, baking soda, and salt.
In a separate larger bowl, whisk the eggs, Greek yogurt, oil, maple syrup, lemon zest, lemon juice, and vanilla until smooth and fully combined.
Gradually fold the dry ingredients into the wet ingredients, mixing just until incorporated and being careful not to overmix.
If the batter feels too thick, add 1–2 tablespoons of almond milk to loosen it slightly.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean.
Allow the loaf to cool completely before adding frosting!
