Make the beef filling by cooking the mince, red onion, passata and spices in a pan. Move to the side once fully cooked.
Heat a nonstick pan on medium heat and evenly sprinkle the grated mozzarella. Lay the eggplant down slightly lapping as per the video. Cook for 2-3 minutes or until the eggplant is slightly translucent.
Top the eggplant with the mince, cottage cheese, thyme, cinnamon and half the parmesan. Once the cheese underneath starts to brown, fold inwards to create a roll.
Cut down roll to make bite-sized pieces and top with parmesan and chilli flakes. Xx. Victoria.
