Crispy Potato Salad
  1. Wash the potatoes and add them to a pot. Add enough water to cover the potatoes.

  2. Cover and bring to a boil then simmer until the potatoes are fork tender, then drain the water.

  3. Line a baking tray with parchment paper, add the potatoes and use a bowl to smash the potatoes about ½ inch thick.

  4. Spray or drizzle well with olive oil and season with a pinch of salt and pepper.

  5. Bake at 425F for 30-35 minutes or until the potatoes are golden and very crispy. Remove from oven and let cool.

  6. While the potatoes are cooling whisk together all of the ingredients for the lemon herb dressing in a big bowl.

  7. Roughly chop the potatoes then add to the bowl and fold gently in the dressing.

  8. Add to a serving bowl, garnish with fresh herbs and enjoy! Serve immediately after dressing
