  1. Heat olive oil in a pan and cook sliced garlic and diced shallot until softened

  2. Season with salt, pepper, and red pepper flakes

  3. Add tomato paste and stir to deepen the tomato flavor

  4. Add halved cherry tomatoes and water, then simmer

  5. Add drained and rinsed cannellini beans to the pan

  6. Transfer to a broiler-safe dish and top with shredded mozzarella

  7. Broil until the cheese is golden and bubbly

  8. Garnish with fresh oregano and serve with bread
