Heat the milk then add the butter and sugar. Transfer the milk mixture to a bowl, let it cool down then stir in the sourdough starter, sprinkle instant yeast and stir. Now add the dry ingredients.
Mix until it comes together, shape it into a ball. Proof until double in size.
Divide and roll into equalizer balls.
Transfer to a baking tray dusted with semolina.
Use tart rings to hold the shape, and top with a baking mat and another baking tray.
Proof until ready and bake at 350 F for 15 minutes.
Remove the top pan and flip it over and bake for another 5 minutes.
