Gently sauté all the veggies and tofu. Salt and pepper to taste.
Thinly roll out the dumpling wrappers
Wet the perimeter of a wrapper. Place filling in the middle and keep folding toward the center until a dumpling shape forms.
In a large pan, heat pan with 1 tsp of oil and place dumplings into pan. Add ½ cup of water and close the lid. Heat for 10 min on med low heat.
Serve with scallion sauce.
