Baked Lemon Butter Cod With Baby Potatoes And Seasonal Greens

  1. Start by preheating the oven to 205c.

  2. Cut the lemon in half. Squeeze the juice from one half of the lemon until you have 1 tablespoon of juice. Place the remaining lemon half, cut into slices, in the bottom of a casserole dish. You can also slice a whole lemon.

  3. Whisk together the butter, 1 tablespoon of lemon juice, and garlic.

  4. Pat the cod fish dry with paper towels and sprinkle it with the pepper and dill. Place it over the lemon slices.

  5. Pour the garlic butter mixture over the cod. Bake for 17-20 minutes or until opaque – the fish will flake easily.

  6. Meanwhile, boil the baby potatoes for 20 minutes until tender. Steam the green vegetables.

  7. Serve the cod with boiled new potatoes and greens, drizzled with the lemon butter and topped with fresh parsley.
