Pasta Salad With Roasted Tomatoes
  1. Heat oven to 300°F (150°C). Cover baking sheets with parchment paper.

  2. Cut each tomato in half lengthwise and arrange cut side up on sheets. Drizzle with olive oil and sprinkle with salt.

  3. Bake for approximately 90 minutes until somewhat shriveled and dry to the touch.

  4. Roughly chop garlic, then add oregano, salt, and black pepper. Mince into a grainy herb paste.

  5. Transfer to a bowl, whisk in lemon juice and vinegar, then slowly drizzle in olive oil while whisking.

  6. In a large bowl, combine drained pasta, roasted tomatoes, cheese, pine nuts, and olives. Toss gently.

  7. Add dressing to taste, along with extra salt and pepper as needed. Finish with basil.
