Wiscombe Rolls
  1. Mix flour, sugar, salt, yeast with warm water

  2. Mix really well with a mixer until smooth & elastic with hand mixer or machine

  3. Add 4 more cups of flour

  4. Knead it til smooth by hand or mixer & let sit for however long it takes you to water the tomatoes, or answer the door, or do whatever takes up 5-15 minutes. Then knead it til smooth & elastic.

  5. Cook at rolls 400-425° for 13-14 minutes (brush with butter right when you pull them out of oven)

  6. Cinnamon rolls - same

  7. Bread - follow any bread recipe

  8. Tortillas on griddle

  9. Pizza crust - I don't know

  10. If rolls seem dry cut of oven, spray with water as soon as they come out

  11. Never put yeast in after or with oil. It will coat it & will not work as well

  12. Hot bread right out of oven does well if you punch it under tap water before getting on racks

  13. Do not add more flour than 10 cups. It will be a little sticky sometimes, but if you can just butter your hands or wet them a little and then carefully turn the dough onto a oiled spray counter to rest it will do better

  14. If you are in a hurry, your rolls or bread can rise in a oven at the lowest setting. Mine is 175°

  15. If you need to get them cooked fast & they are not quite risen enough, turn on your oven & put them in. As it heats, they will continue to rise. You will have to adjust the time

  16. If they have risen too high, make sure you handle them good-so careful so they wont sag & make sure you preheat the oven so they will get hot fast & stop the rising process
