Preheat the grill to high and line a grill pan with foil, or prepare a barbecue for cooking.
Put all the ingredients, except the chicken, in a large bowl and stir to combine.
Add 8 skin-on boneless chicken thighs to the bowl and use your hands to massage the marinade into the chicken flesh, ensuring that it is really well coated.
Cook the chicken under the grill or on the barbecue for 6-8 minutes on each side, or until the chicken is tender, golden and beginning to char slightly at the edges.
Serve hot with your choice of salad alongside.
