Zucchini Ginger Olive Oil Cake
  1. Preheat the oven to 325° and lightly grease a 9”x 5” loaf pan with olive oil. Line the loaf pan with parchment paper.

  2. In a medium bowl, whisk together the dry ingredients: flour, cinnamon, cardamom, salt, baking powder, and baking soda.

  3. In a separate large bowl, whisk together the eggs and sugar. Slowly whisk in the olive oil until well combined. Grate the ginger into the wet ingredients and whisk well.

  4. Grate the zucchini and wring out as much liquid as possible. Stir the zucchini into the wet ingredients.

  5. Fold in the dry ingredients until well combined. Scrape the batter into the prepared pan and scatter sesame seeds and turbinado sugar on top.

  6. Bake until a toothpick inserted into the center comes out clean, about 90-110 minutes.

  7. Serve with unsalted butter and flaky sea salt, or griddle each slice in butter until crisp.
