Season the chicken breasts with salt and pepper.
In a skillet, heat olive oil over medium-high heat.

In a small bowl, mix honey, lime juice, and chopped cilantro.
Pour the mixture over the cooked chicken breasts in the skillet.

Serve the cilantro-lime honey chicken over cooked rice, topped with peach or mango-avocado salsa.
