Preheat the oven to 180ºC/160ºC fan, and line a 2lb loaf tin
Beat together the butter and sugar
Add in the flour, eggs and coconut and beat again
Pour the mix into the tin
Bake the cake in the oven for 50-55+ minutes
Leave the cake to cool in the tin.
Once the cake has cooled fully, carefully spread the jam on the top of the cake.
Sprinkle on the desiccated coconut and enjoy
