Place chicken breast in crockpot with all seasonings. Mix well to ensure all chicken is coated.
Cook for 2-3 hours on high.
While chicken is cooking, make the sauce.
Combine all sauce ingredients into a blender, blend until smooth.
Heat oven to 350 F.
Once chicken is cooked, shred it in the crockpot. Add the sauce, mozzarella cheese (3 cups), cooked bacon bits, and fresh chopped chives. Mix all ingredietns until well combined.
Layout a tortilla, add a generous amount of mozzarella cheese, white rice (if using), a good layer of chicken mixture, and roll into a burrito.
Place burritos on a baking sheet and bake for 10-15 minutes until browned.
Remove from oven and let cool.
Freezing Instructions: Wrap the quesadillas in aluminum foil or put them in an airtight freezer bag. Place them in the freezer and keep frozen for up to 3 months
Reheating Instructions: Take one burrito out of the freezer, remove from foil, wrap in a paper towel & microwave for approximately 2 min - this step thaws the burrito allowing it to warm up in the middle. Now air fry at 190C/375F for around 5 - 8 min (time may vary slightly depending on the air fryer - for this last step you can also oven bake or pan fry the burrito)
