One day in advance, season your turkey with Savory Seasoned Salt and brown sugar. Refrigerate overnight.
On the day of roasting, bring turkey to room temperature, then roast at 325°F for about 2 hours, basting every 30 minutes.
Prepare glaze by combining Hot Honey, soy sauce, and thyme. Brush the turkey with the glaze and continue roasting until the turkey reaches 165°F.
Remove from oven, let it rest for 30 minutes, and save 2 cups of drippings for gravy.
Make gravy by toasting flour in butter, then gradually adding reserved stock. Adjust seasoning with soy sauce.
