Add whole pack of boneless chicken thighs to a pot
Add in 2 tins of coconut milk, big dash of light and dark soy, juice of 1 lime, dash of fish sauce, and a big blob of massaman curry paste
Chuck in your favourite veggies: red pepper, red onion, bean sprouts, and green beans
Cover the pot and add to oven on 150-160°C for 2-3 hours until the chicken is cooked and falling apart
Once removed, add a cornflour slurry to thicken the sauce to your liking if needed
Add in your favourite noodles and pop back in the oven for 10 minutes to cook and absorb the sauce
Serve with a wedge of lime and fresh coriander if desired
