Dambou Delight: Niger’s Savory Stew
  1. In a large pot, heat the vegetable oil over medium heat. Add the onions and sauté until they become translucent.

  2. Add the chopped meat to the pot and brown it on all sides.

  3. Stir in the minced hot peppers, ground ginger, cloves, cinnamon, and black pepper. Sauté for a couple of minutes.

  4. Add the chopped tomatoes and tomato paste, and cook until the tomatoes soften.

  5. Pour in the water and bring the mixture to a boil. Reduce the heat and let it simmer for about 1.5 hours or until the meat is tender.

  6. Meanwhile, prepare the millet or rice according to your preference.

  7. Serve the Dambou stew over a bed of millet or rice. Garnish with fresh cilantro or parsley.
