Mix all the dry rub ingredients together in a small dry bowl.
Using mustard to help the seasoning stick, coat the ribs evenly on both sides.
Wrap in well greased aluminum foil and set on a tray.
Bake at 350f for 2 hours for smaller racks and 2-½ hours for larger racks.
Remove from the oven and allow to cool for five minutes.
Open the foil carefully, remove the ribs and place them on a separate tray.
Brush heavily with @grace Jerk bbq sauce or your favourite bbq sauce will work fine as well.
Put back into the oven uncovered for 10-12 minutes.
When ready, allow to cool slightly, slice and serve.
