Thai Meatballs
  1. Preheat the oven to 350°F (177°C). Grease a cookie sheet with the coconut oil.

  2. In a large bowl, mix the beef, curry paste, coconut cream, eggs and salt.

  3. Form 16 little meatballs from the mixture. Place the meatballs on the cookie sheet and bake until fully cooked but still soft and juicy, about 30 minutes. You can turn the meatballs after 20 minutes, so they brown on both sides.

  4. You can also fry the meatballs in a nonstick skillet with coconut oil. Cook until they are just pink inside, about 4 to 5 minutes.
