High Protein Cheesy Crispy Smashed Potatoes
  1. Boil potatoes for 20 minutes or until fork tender. Preheat the oven to 450 F.

  2. Drain the potatoes and arrange them on baking sheets. Using a cup with a flat bottom, smash each potato.

  3. Drizzle each with a generous amount of olive oil (this is what makes it crispy!). Sprinkle with salt and pepper.

  4. Bake for 30 minutes, or until crispy and golden brown - cook time depends on the size of your potatoes.

  5. Meanwhile, blend the cottage cheese until smooth, then in a separate bowl mix together all topping ingredients.

  6. Once the potatoes are done, carefully remove them from the tray with a spatula. Add a spoonful of the topping to each potato, and enjoy!
