Boil potatoes for 20 minutes or until fork tender. Preheat the oven to 450 F.
Drain the potatoes and arrange them on baking sheets. Using a cup with a flat bottom, smash each potato.
Drizzle each with a generous amount of olive oil (this is what makes it crispy!). Sprinkle with salt and pepper.
Bake for 30 minutes, or until crispy and golden brown - cook time depends on the size of your potatoes.
Meanwhile, blend the cottage cheese until smooth, then in a separate bowl mix together all topping ingredients.
Once the potatoes are done, carefully remove them from the tray with a spatula. Add a spoonful of the topping to each potato, and enjoy!
