In a bowl, combine the olive oil, white wine, 2 tablespoons of lemon juice, lemon zest, 2 cloves of minced garlic, crushed red pepper flakes, dried oregano, 1 teaspoon of kosher salt, and ½ teaspoon of black pepper. Mix well.
Add the chicken (pork) pieces to the marinade, ensuring they are well coated. Let them marinate for at least 30 minutes.
Preheat your grill or grill pan over medium heat and lightly spray it with olive oil cooking spray.
In a separate bowl, mix together the Italian breadcrumbs, panko, grated Parmesan cheese, garlic powder, remaining lemon juice, and the remaining minced garlic.
Remove the chicken from the marinade and thread the pieces onto the skewers.
Roll each skewer in the breadcrumb mixture until well coated.
Place the skewers on the grill and cook for about 15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
In a small saucepan, melt the butter over low heat and stir in the chopped parsley.
Once the chicken is done, brush the skewers with the melted butter mixture before serving.
