Get your chorizo in the pan over a medium low heat and fry for a couple of minutes until they release their oil
Go in either your chicken and fry for a couple of minutes
Add your paprika, onion powder, oregano, Cajun seasoning and salt and pepper then mix and fry for a minute
Go in with your onion, pepper and garlic and mix through
Add your tomato puree and mix through
Add your uncooked rice and stir through, then add your tinned tomatoes and bone broth (or water and stock cube) and mix through
Cover with a lid over a low simmering heat for 30 minutes, stirring and scraping the bits off the bottom of the pan every 10 minutes or so
Take the lid off, give it a stir and garnish up!
