Mexican Street Corn Inspired Dip
  1. Dice red onion, jalapeño & cilantro

  2. In a large skillet heat 2 tbsp of olive oil & add corn (if using fresh cut corn off the cob)

  3. Season with smoked paprika, cayenne, salt & pepper

  4. Cook stirring for 10 minutes until the corn starts to caramelize

  5. Transfer to a bowl and let cool for 10 mins

  6. Add the remaining ingredients, toss well

  7. Serve with chips
