Dice red onion, jalapeño & cilantro
In a large skillet heat 2 tbsp of olive oil & add corn (if using fresh cut corn off the cob)
Season with smoked paprika, cayenne, salt & pepper
Cook stirring for 10 minutes until the corn starts to caramelize
Transfer to a bowl and let cool for 10 mins
Add the remaining ingredients, toss well
Serve with chips
