Buffalo Chicken & Bacon Mac N' Cheese
  1. Roast bell peppers and onions according to instructions

  2. Add cubed chicken breast, salt, pepper, garlic, and 100g buffalo sauce to slow cooker

  3. Add roasted vegetables to slow cooker

  4. Cook on High for 2-3 hours or Low for 3-4 hours

  5. Break apart cooked chicken using tongs

  6. Add half-cooked pasta to slow cooker

  7. Blend cottage cheese, cream cheese, cheddar cheese, parmigiano reggiano, 120g buffalo sauce, milk, and honey until completely smooth

  8. Pour cheese sauce over pasta and chicken

  9. Cover and cook for another 20-30 minutes

  10. Place centercut bacon on foil-lined baking sheet

  11. Bake bacon at 400 degrees for 20-30 minutes

  12. Chop and crumble cooked bacon

  13. Mix bacon and chives into the mac and cheese

  14. Divide into 11 servings and store frozen

  15. Reheat by microwaving with 2-3 tablespoons milk or water for 3-5 minutes
