Pineapple Shortbread
  1. Preheat oven to 350°F (175°C).

  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.

  3. Beat in the vanilla extract.

  4. In a separate bowl, whisk together the flour and salt.

  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  6. Press the dough evenly into the bottom of an 8x8 inch baking pan.

  7. Arrange the drained pineapple rings on top of the dough.

  8. Sprinkle the brown sugar evenly over the pineapple rings.

  9. Bake for 30-35 minutes, or until the edges are golden brown and the pineapple is caramelized.

  10. Let cool in the pan for at least 15 minutes before cutting into squares.
