Preheat oven to 350 degrees. Line a loaf pan.
In a bowl, mash the bananas and then add sugar, eggs, Greek yogurt, and vanilla. Mix well!
Sift in the oat flour, cinnamon, and baking soda. Mix until there are no more streaks of oat flour.
Next, add in the olive oil and fold everything together. Fold in the walnuts as well!
Pour batter into a pan and then on top, add the chocolate and caramel chips. I also added pecans.
Bake for 55 min-1 hour.
