Spicy Watermelon Salad
  1. Slice the 2 ends off the watermelon.

  2. Slice the watermelon in half, crosswise.

  3. Place each half, cut-side down on the cutting board.

  4. Going around the watermelon, slice off the peel.

  5. Slice each half into 1-inch cubes.

  6. Add the watermelon to a large bowl.

  7. Season with a hefty pinch of salt, toss and set aside.

  8. Make the dressing: to a measuring cup, add the soy sauce, chili oil, sesame oil, sugar, rice vinegar, and toasted sesame seeds.

  9. Vigorously whisk until combined.

  10. Drain the excess liquid from the watermelon bowl.

  11. Pour the dressing all over the watermelon and toss to combine.
