INGREDIENTS (4 servings, 20 minutes)
• 480g chicken breast
• 2 packets of white rice (250g bags)
• mixed vegetable stir fry 200g
• 10g cornflour
• 6 tsp light soy
• 4 tsp dark soy
• 40g reduced sugar sweet chilli sauce
40g honey
• 10g sriracha
• 1 tsp garlic puree
• salt pepper
Dice up the chicken breast and coat in the cornflour and half of the light soy sauce.
Fry this off in a pan.
Once the chicken has sealed, stir through the garlic.
In a bowl, combine the rest of the light soy sauce, dark soy, sriracha, sweet chilli, and honey.
Once the chicken is cooked, pour this in along with the vegetables and a sliced spring onion (save the green tops for later) and let this cook for 5-10 more minutes.
Microwave the rice as per the packet instructions.
