Make your zoodles. Wash and spiralize and/or shave your zucchini into noodles. Set aside.
Julienne your onion. Put a saucepan with a splash of oil and your onions on low to medium heat. Saute until your onions are translucent.
Start your sauce. To your onions, add two teaspoons of ground or grated turmeric, an equal amount of black pepper, paprika to taste, a generous amount of tomato paste, garlic powder, and your favorite all-purpose seasoning. let simmer for 2 minutes on medium heat.
Turn off your heat. Mix in your room temperature coconut milk and add your zoodles. Toss the zoodles in your sauce until fully coated. Adjust the seasoning to taste.
